Oh, the allure of the side quest.

So... I'm one of those people that likes to do my therapy in the kitchen. People actually like to visit me when I am in a rotten mood because they know they will get fed.


Anyway, I've been playing around with a kimchi recipe for almost four years now and I have to admit, it's pretty good. And when I make it -- which is often -- I make a big batch and share it with my friends and family. Well... over the last year or so, I have had more and more people say, "You should try and get this on the market. It's that good."


Let's be clear: I do not want to make kimchi for a living.


However, I DO want to live a life full of adventure and challenge -- and bringing a food product to retail seems like all of that and then some. CUE THE SIDE QUEST! As if I didn't have enough on my plate already, the allure of the idea has found me hunkered down in my kitchen for the past few months refining my recipe. I'm pleased to announce that I have managed to produce a full-flavored kimchi that is both vegan and gluten-free! Now that my product is nailed down, I'll be spending the winter months getting all the legal stuff in line, getting FDA approval, designing packaging, finding a processor, and working out a marketing plan.


Maybe by the time summer rolls around, you will see it in stores. Fingers crossed.
